
The Scottish Shish
Ingredients
4 Persian style flatbreads
300g sausage meat
1 free range egg yolk
410g Haggis
2 tsp cumin
2 tsp paprika
1 tsp cinnamon
1/2 red pepper diced

Method
In a bowl add the sausage meat, haggis, egg yolk, and the remaining dry ingredients. Mix well using your hands, then split the mixture into 4 and form into one long sausage shape around 4 skewers. Put the skewers into the fridge to chill for at least 30 mins.
Once chilled, remove the skewers from the fridge and grill on a skillet or pan on medium heat being sure to keep turning the skewers, cook until they are piping hot all the way through. This will take approximately 5–10 mins.
Toast your Persian style flatbreads or place in oven for 3-5 mins. Serve your kebabs with tzatziki or your favourite sauce and enjoy!
