Ingredients

  • For the sandwich:
  • ● 2 x Deli Kitchen Focaccias
  • ● 1 ripe avocado, sliced
  • ● 1 small cucumber, thinly sliced
  • ● 1 handful alfalfa sprouts (or microgreens)
  • ● 1 ball mozzarella, sliced
  • For the Green Goddess Slaw :
  • ● 1/4 cup sour cream (or Greek yogurt for a lighter option)
  • ● 1tbsp mayo
  • ● 1 garlic clove
  • ● Juice ½ lemon
  • ● 2 tbsp olive oil
  • ● 1 cup fresh herbs (e.g., parsley, chives, tarragon, dill – a mix works best)
  • ● 2 handfuls of kale
  • ● 1 handful alfalfa sprouts (or microgreens)
  • ● Salt and pepper to taste

Method

  1. In a blender or food processor, combine the sour cream, mayonnaise, garlic, lemon
    juice, olive oil, and herbs. Blitz until smooth and vibrant green. Season with salt
    and pepper to taste. Pour the dressing over the kale and sprouts.
  2. Lightly toast the focaccia halves if you prefer a bit of crunch.
  3. Spread a generous layer of mayo on the bottom ½ of the focaccia.
  4. Layer the cucumber, avocado slices, mozzarella, then the slaw. Place the top half of
    the focaccia on the sandwich and gently press down.
  5. This is best enjoyed fresh but can be wrapped tightly in parchment and stored in
    the fridge for a few hours if needed
