
Focaccia Bites with Mortadella, Burrata & Pistachio Pesto Drizzle
Ingredients
2 slices of Deli Kitchen focaccia
6 slices of mortadella
1 ball of burrata
Pesto:
100g pistachios, roughly chopped
2 tablespoons olive oil
1 tablespoon lemon juice
30g fresh basil leaves
A pinch of salt
Fresh basil leaves, to garnish (optional)
2 slices of Deli Kitchen focaccia
6 slices of mortadella
1 ball of burrata
Pesto:
100g pistachios, roughly chopped
2 tablespoons olive oil
1 tablespoon lemon juice
30g fresh basil leaves
A pinch of salt
Fresh basil leaves, to garnish (optional)
Method
Preheat your oven to 180°C (160°C fan). Place the focaccia slices on a baking tray and lightly drizzle with olive oil.
Warm the focaccia in the oven for 3-4 minutes until slightly crisped on the edges.
While the focaccia is warming, prepare the pistachio pesto. In a food processor, combine the pistachios, olive oil, lemon juice, fresh basil, and a pinch of salt. Blend until smooth, adding more oil if necessary to achieve a drizzle consistency.
Remove the focaccia from the oven and top with the mortadella then burrata and drizzle a generous amount of pistachio pesto over the top of each slice.
Garnish with fresh basil leaves, if using.
Serve immediately while the focaccia is warm and the burrata is creamy.
