250g lamb mince

250g pack halloumi, cut into cubes
Packet of lamb’s lettuce
Portion of cherry tomatoes
1 red onion, chopped
Tub of tzatziki
Handful of coriander
1 tbsp olive oil

Method
To make the meatballs, combine the lamb mince with the garlic, lemon zest, mint, honey, some sunflower oil, and a little seasoning. Shape into balls and put in the fridge to chill.
Thread the onion, meatballs, and halloumi cubes onto 4 wooden skewers.
Mix together the olive oil and lemon juice to create the marinade, then brush over the kebabs. Grill for 4-5 mins on each side until cooked through.
Take the Lebanese Style Flatbreads and spread a dollop of tzatziki over both.
Layer on lamb’s lettuce and tomatoes.
