Homemade Falafel on Flatbread

Ingredients

  • 2 Deli Kitchen Greek Style Flatbreads
  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped onion
  • 2-3 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and pepper
  • 1-2 tbsp all-purpose flour
  • 1 tsp baking powder
  • Cooking Spray
  • 4 tbsp Hummus
  • 4 tbsp Tzatziki
  • 1 Portion of Tabouleh
  • 5 Cherry tomatoes, halved
  • 1 Portion of mixed olives
  • 50g of Feta cheese, cubed
  • 1-2 tablespoons pomegranate seeds

Method

  1. In a food processor, blend chickpeas, parsley, onion, garlic, spices, salt, and pepper in a food processor until a coarse paste forms.
  2. Empty paste into a separate bowl, then mix in flour and baking powder.
  3. Shape small portions of the mixture into balls (or patties if preferred).
  4. Spray air fryer base and falafels with cooking spray, then cook at 190ºC for 15 minutes, flipping after 10 minutes.
  5. Place the flatbread on a clean surface or plate.
  6. Top with hummus, tzatziki, tabouleh, tomatoes, olives, falafel, and feta.
  7. Finish with pomegranate seeds. Serve and enjoy!
