  • 2 Deli Kitchen Carb Lite Wraps 
  • 1 cucumber, diced
  • 2 to 3 medium tomatoes, diced
  • 1/2 red onion, thinly diced
  • 2 tablespoons chopped coriander
  • Portion of feta, crumbled
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 teaspoon salt and fresh cracked pepper, or to taste


  1. On a chopping board, dice cucumbers, onion, and tomatoes into small cubes. 
  2. Add the diced veggies, chopped coriander, and crumbled feta into a large salad bowl.
  3. Drizzle over the olive oil and lemon juice then season with salt and pepper. Mix together.
  4. Grab two Carb Lite Wraps, spoon on the salad mixture, fold, slice and enjoy!
