Ingredients
- 2 Deli Kitchen Carb Lite Wraps
- 1 cucumber, diced
- 2 to 3 medium tomatoes, diced
- 1/2 red onion, thinly diced
- 2 tablespoons chopped coriander
- Portion of feta, crumbled
- 3 tablespoons extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1/4 teaspoon salt and fresh cracked pepper, or to taste
Method
- On a chopping board, dice cucumbers, onion, and tomatoes into small cubes.
- Add the diced veggies, chopped coriander, and crumbled feta into a large salad bowl.
- Drizzle over the olive oil and lemon juice then season with salt and pepper. Mix together.
- Grab two Carb Lite Wraps, spoon on the salad mixture, fold, slice and enjoy!
