Ingredients

  • 2 Deli Kitchen Greek Style Flatbreads
  • 2 eggs
  • Jar of passata
  • Mozzarella cheese, grated
  • Italian herbs
  • Salt and pepper
  • Handful of rocket
  • Handful of cherry tomatoes, halved
  • ½ Avocado, sliced lengthways 
  • Balsamic Vinegar glaze

Method

  1. Preheat oven to 180°C.
  2. Place two Greek Style Flatbreads on a tray.
  3. Spread passata sauce all over the flatbread, leaving 1cm crust.
  4. Crack one egg over each flatbread.
  5. Sprinkle with cheese and top with halved cherry tomatoes.
  6. Sprinkle with salt, pepper, and Italian herbs.
  7. Cook for 12-15 minutes, until the flatbread is crispy and the eggs are cooked.
  8. Top with rocket, avocado and balsamic glaze.
  9. Cut into quarters, serve and enjoy!
