Ingredients
- 2 Deli Kitchen Greek Style Flatbreads
- 2 eggs
- Jar of passata
- Mozzarella cheese, grated
- Italian herbs
- Salt and pepper
- Handful of rocket
- Handful of cherry tomatoes, halved
- ½ Avocado, sliced lengthways
- Balsamic Vinegar glaze
Method
- Preheat oven to 180°C.
- Place two Greek Style Flatbreads on a tray.
- Spread passata sauce all over the flatbread, leaving 1cm crust.
- Crack one egg over each flatbread.
- Sprinkle with cheese and top with halved cherry tomatoes.
- Sprinkle with salt, pepper, and Italian herbs.
- Cook for 12-15 minutes, until the flatbread is crispy and the eggs are cooked.
- Top with rocket, avocado and balsamic glaze.
- Cut into quarters, serve and enjoy!
