  • 2 Deli Kitchen Plain Folded Flatbreads
  • 2 medium eggs
  • 1/2 medium avocado
  • 1 medium tomato, diced
  • 1 spring onion, diced
  • Fresh basil, chopped
  • 1 red chilli, finely diced
  • 10g feta
  • 1 lemon


  1. In a bowl, smash the avocado with diced spring onion and tomato, juice of 1/2 lemon, 1/4 finely diced red chilli and chopped basil, then season with salt and pepper.
  2. Whisk the egg, then softly scramble over a low heat.
  3. Toast the folded flatbreads, then spread over the avocado mix, top with the scrambled egg and crumble over the feta.
  4. Serve immediately and enjoy!
