Ingredients
- 2 Deli Kitchen Greek Style Flatbreads
- 1 can (15 oz) of chickpeas, drained and rinsed
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped onion
- 2-3 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper (adjust to taste)
- Salt and pepper
- 1-2 tbsp all-purpose flour
- 1 tsp baking powder
- Cooking Spray
- 4 tbsp Hummus
- 4 tbsp Tzatziki
- 1 Portion of Tabouleh
- 5 Cherry tomatoes, halved
- 1 Portion of mixed olives
- 50g of Feta cheese, cubed
- 1-2 tablespoons pomegranate seeds
Method
- In a food processor, blend chickpeas, parsley, onion, garlic, spices, salt, and pepper in a food processor until a coarse paste forms.
- Empty paste into a separate bowl, then mix in flour and baking powder.
- Shape small portions of the mixture into balls (or patties if preferred).
- Spray air fryer base and falafels with cooking spray, then cook at 190ºC for 15 minutes, flipping after 10 minutes.
- Place the flatbread on a clean surface or plate.
- Top with hummus, tzatziki, tabouleh, tomatoes, olives, falafel, and feta.
- Finish with pomegranate seeds. Serve and enjoy!
