Ingredients
- 2 Deli Kitchen High Protein Wraps
- 1 x 400g sirloin steak, cooked medium rare and thinly sliced (makes 2 wraps)
- 1 pouch (250g) of microwavable cooked rice
- ½ cup black beans, drained and rinsed
- 1 tomato, nely diced
- ½ white onion, nely diced
- Handful of fresh coriander, chopped
- Juice of ½ lime
- Pinch of salt and pepper
- A few leaves of gem lettuce, shredded
- 2 sheets of foil for wrapping
Method
- Combine the diced tomato, onion, coriander, lime juice, and a pinch of salt and
pepper in a bowl. Stir well and set aside. - Heat the rice pouch in the microwave according to the packet instructions and mix
with the black beans. - Lay out a sheet of foil for each wrap on a at surface, and place a wrap on top of
each foil sheet. - Start with a layer of shredded gem lettuce in the centre of each wrap. Add half of
the rice and black bean mixture to each wrap. Divide the sliced steak between the
two wraps, layering it on top. Spoon the fresh salsa generously over the steak. - Fold the sides of the wrap in, then roll it tightly from bottom to top, using the foil to
help hold it all together. Wrap the foil snugly around each wrap to keep them
secure. - Slice the foil-wrapped wraps in half for easy eating, or enjoy them whole for a
hearty, high-protein meal.
