Goats Cheese and Caramelised Onion Flatbread

Ingredients

  • ● 2 Deli Kitchen Greek flatbreads
  • ● 2 red onions, thinly sliced
  • ● 3 tbsp olive oil
  • ● ½ tbsp balsamic glaze
  • ● Goat’s cheese, crumbled
  • ● Fresh thyme leaves
  • ● Fresh rocket

Method

  1. Heat 2 tablespoons of olive oil in a frying pan over medium heat.
  2. Add the sliced red onions and cook, stirring occasionally, until softened and
    golden (about 15–20 minutes). Stir in the balsamic glaze and cook for another 1–2
    minutes. Set aside.
  3. Lay the Deli Kitchen Greek flatbreads on a baking tray.
  4. Spread the caramelised onions evenly over each flatbread.
  5. Scatter the crumbled goat’s cheese on top and sprinkle with fresh thyme leaves.
  6. Place the flatbreads in a pizza oven and bake until the edges are crisp and the
    cheese is slightly melted, about 5–7 minutes.
  7. Remove from the oven and top with fresh rocket leaves.
  8. Slice into portions and serve immediately, either as a starter or part of a main
    spread
