Ingredients
- For the homemade pesto:
- 50g Fresh basil leaves
- 1 garlic clove
- 25g Parmesan cheese, grated
- 30g Pine nuts
- 80ml Extra virgin olive oil
- Juice of a lemon
- Salt and pepper, to taste
- For the wrap:
- 2 Deli Kitchen Everything Wraps
- 200g cooked chicken breasts, chopped
- 1 tbsp mayonnaise
- 2 Romaine lettuces, shredded
Method
- In a food processor, combine the basil leaves, garlic, parmesan cheese, and pine nuts. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Season with salt and lemon juice. Set aside.
- In a bowl, combine the chicken breast and shredded lettuce with 2–3 tablespoons of the homemade pesto and a tbsp of mayonnaise. Toss until the chicken is evenly coated.
- Lay the wraps on a flat surface and fill with the chicken pesto filling. Fold the wraps, then roll it tightly from the bottom to the top, securing the filling. Slice and enjoy!
