This Cauliflower Wrap has a combination of creamy hummus and zesty chimichurri to make every mouthful a masterclass in texture and spice.
Ingredients
2 Deli Kitchen Protein Wraps
1 small cauliflower, chopped
½ tsp ground turmeric
½ tsp chilli powder
1 tsp ground cumin
2 tbsp hummus
2 large handfuls of rocket
Sprinkle of pomegranate seeds
Dried red chilli flakes
Drizzle of olive oil
Sea salt

Method
Preheat oven to 200°C fan.
Cut the cauliflower into small florets and place them onto a large baking tray.
Drizzle with olive oil, turmeric, chilli powder, cumin, and a pinch of salt. Mix well and roast for 15–20 minutes.
Once cooked, remove from the oven and set aside.
Spoon a heaped tablespoon of hummus onto each wrap.
Make a slice from the centre of the wrap to one edge.
Add three dollops of chimichurri sauce evenly across the wrap.
In one quarter, add a handful of rocket.
In the next quarter, add the roasted cauliflower.
Then on the other half of the wrap sprinkle over pomegranate seeds and a pinch of chilli flakes.
Fold each section of the wrap and serve!
