Ingredients

  • ● 4 Deli Kitchen arepas
  • ● 2 ripe avocados
  • ● 3 tbsp mayonnaise
  • ● Small bunch fresh coriander
  • ● 2 pre-cooked chicken breasts, shredded
  • ● 2 tomatoes, finely diced
  • ● 1 red onion, thinly sliced
  • ● 2 limes
  • ● Drizzle of olive oil
  • ● Extra salsa (store-bought or homemade)
  • ● Bottle of hot sauce (optional)

Method

  1. Blend the avocados, mayonnaise, juice of 1 lime, and a handful of coriander leaves
    until smooth. Season with salt to taste.
  2. Mix the shredded chicken with the avocado crème until evenly coated. Set aside.
  3. Combine the diced tomatoes, a small handful of chopped coriander, juice of ½
    lime, a drizzle of olive oil, and a pinch of salt. Stir well and set aside.
  4. Toss the sliced red onions with the juice of ½ lime and a pinch of salt. Let sit for at
    least 10 minutes.
  5. Place the arepas crumb-side down on a baking tray. Warm in the oven for 1–2
    minutes.
  6. Fill the arpea with the shredded chicken, spoon over the salsa, and top with
    pickled red onions. Close with the other half of the arepa as a lid.
  7. Offer extra salsa and hot sauce for those who like it spicier
