Ingredients
- ● 2 Deli Kitchen Greek flatbreads
- ● 2 red onions, thinly sliced
- ● 3 tbsp olive oil
- ● ½ tbsp balsamic glaze
- ● Goat’s cheese, crumbled
- ● Fresh thyme leaves
- ● Fresh rocket
Method
- Heat 2 tablespoons of olive oil in a frying pan over medium heat.
- Add the sliced red onions and cook, stirring occasionally, until softened and
golden (about 15–20 minutes). Stir in the balsamic glaze and cook for another 1–2
minutes. Set aside. - Lay the Deli Kitchen Greek flatbreads on a baking tray.
- Spread the caramelised onions evenly over each flatbread.
- Scatter the crumbled goat’s cheese on top and sprinkle with fresh thyme leaves.
- Place the flatbreads in a pizza oven and bake until the edges are crisp and the
cheese is slightly melted, about 5–7 minutes. - Remove from the oven and top with fresh rocket leaves.
- Slice into portions and serve immediately, either as a starter or part of a main
spread
