Ingredients
- ● 4 Deli Kitchen arepas
- ● 2 ripe avocados
- ● 3 tbsp mayonnaise
- ● Small bunch fresh coriander
- ● 2 pre-cooked chicken breasts, shredded
- ● 2 tomatoes, finely diced
- ● 1 red onion, thinly sliced
- ● 2 limes
- ● Drizzle of olive oil
- ● Extra salsa (store-bought or homemade)
- ● Bottle of hot sauce (optional)
Method
- Blend the avocados, mayonnaise, juice of 1 lime, and a handful of coriander leaves
until smooth. Season with salt to taste. - Mix the shredded chicken with the avocado crème until evenly coated. Set aside.
- Combine the diced tomatoes, a small handful of chopped coriander, juice of ½
lime, a drizzle of olive oil, and a pinch of salt. Stir well and set aside. - Toss the sliced red onions with the juice of ½ lime and a pinch of salt. Let sit for at
least 10 minutes. - Place the arepas crumb-side down on a baking tray. Warm in the oven for 1–2
minutes. - Fill the arpea with the shredded chicken, spoon over the salsa, and top with
pickled red onions. Close with the other half of the arepa as a lid. - Offer extra salsa and hot sauce for those who like it spicier
