Ingredients

  • 1 Deli Kitchen Protein Wrap
  • 1 Lettuce, shredded
  • 1 pack of Mexican rice (store-bought)
  • 1 tomato, diced
  • 1 red onion, diced
  • Block of Tofu, chopped
  • 1 can of black beans, drained
  • Handful of coriander, chopped
  • 1 avocado, diced
  • For the homemade sauce:
  • 1 cup vegan yogurt unsweetened
  • 3/4 tsp paprika
  • 3/4 tsp chilli powder
  • 1 tsp onion powder
  • 1 tsp garlic powder 
  • 1 tsp apple cider vinegar 
  • 1/2 tsp ground cumin

Method

  1. Place a Deli Kitchen Protein Wrap in an oven-proof bowl, shaping it so that it forms a bowl-like structure.
  2. Pop into the oven for 5 minutes, until the wrap is set in a bowl shape and crispy.
  3. Take the protein wrap bowl and fill the base with the shredded lettuce.
  4. Next, in different sections of the bowl, add the Mexican rice, black beans, tofu, tomato, avocado, and red onion.
  5. Then sprinkle over the coriander.
  6. In a small jug, mix all of the ingredients for the homemade sauce, then drizzle all over the burrito bowl.
  7. Serve and enjoy!
