
Spiced fish with hot and sour cucumber
Ingredients
2 frozen white fish fillets
1 tsp ground coriander
1 tbsp sunflower or veg oil
1/2 large cucumber, halved lengthways, deseeded and thinly sliced
1 red chilli, thinly sliced
2 tsp sugar
2 tbsp white or red wine vinegar
1 little gem lettuce, shredded
1 Deli Kitchen Plain Naan

1/2 large cucumber, halved lengthways, deseeded and thinly sliced

Method
Sprinkle spices onto a large plate and season with lots of salt and pepper. Add the fish, turning a few times to coat. Set aside for 10 mins.
In a medium mixing bowl, mix together cucumber, chilli, sugar, vinegar, and large pinch of salt. Leave for 10 mins.
Heat oil in a medium non-stick frying pan, add fish and cook over a medium-high heat for 3 mins per side, until cooked through.
Scatter lettuce over naan, flake over the cooked fish. Drain cucumbers and place on top of the fish.
