Cauliflower Wrap

Ingredients

  • 2 Deli Kitchen Protein Wraps
  • 1 small cauliflower, chopped
  • ½ teaspoon ground turmeric
  • ½ teaspoon chilli powder
  • 1 teaspoon ground cumin
  • 2 tablespoons hummus
  • 2 large handfuls of rocket
  • Sprinkle of pomegranate seeds
  • Dried red chilli flakes
  • Drizzle of olive oil
  • Sea salt
  • Chimichurri sauce

Method

  1. Preheat oven to 200°C fan.
  2. Cut the cauliflower into small florets and place them onto a large baking tray.
  3. Drizzle with olive oil, turmeric, chilli powder, cumin and a pinch of salt. Mix well and roast for 15–20 minutes.
  4. Once cooked, remove from the oven and set aside.
  5. Spoon a heaped tablespoon of hummus onto each wrap. 
  6. Make a slice from the centre of the wrap to one edge.
  7. Add three dollops of chimichurri sauce evenly across the wrap.
  8. In one quarter, add a handful of rocket.
  9. In the next quarter, add the roasted cauliflower.
  10. Then on the other half of the wrap sprinkle over pomegranate seeds and a pinch of chilli flakes.
  11. Fold each section of the wrap and serve!
