Ingredients
- 2 Deli Kitchen Protein Wraps
- 1 small cauliflower, chopped
- ½ teaspoon ground turmeric
- ½ teaspoon chilli powder
- 1 teaspoon ground cumin
- 2 tablespoons hummus
- 2 large handfuls of rocket
- Sprinkle of pomegranate seeds
- Dried red chilli flakes
- Drizzle of olive oil
- Sea salt
- Chimichurri sauce
Method
- Preheat oven to 200°C fan.
- Cut the cauliflower into small florets and place them onto a large baking tray.
- Drizzle with olive oil, turmeric, chilli powder, cumin and a pinch of salt. Mix well and roast for 15–20 minutes.
- Once cooked, remove from the oven and set aside.
- Spoon a heaped tablespoon of hummus onto each wrap.
- Make a slice from the centre of the wrap to one edge.
- Add three dollops of chimichurri sauce evenly across the wrap.
- In one quarter, add a handful of rocket.
- In the next quarter, add the roasted cauliflower.
- Then on the other half of the wrap sprinkle over pomegranate seeds and a pinch of chilli flakes.
- Fold each section of the wrap and serve!
