Ingredients
- 2 Deli Kitchen Plain Folded Flatbreads
- 2 medium eggs
- 1/2 medium avocado
- 1 medium tomato, diced
- 1 spring onion, diced
- Fresh basil, chopped
- 1 red chilli, finely diced
- 10g feta
- 1 lemon
Method
- In a bowl, smash the avocado with diced spring onion and tomato, juice of 1/2 lemon, 1/4 finely diced red chilli and chopped basil, then season with salt and pepper.
- Whisk the egg, then softly scramble over a low heat.
- Toast the folded flatbreads, then spread over the avocado mix, top with the scrambled egg and crumble over the feta.
- Serve immediately and enjoy!
